The fish
A grouper fight is decided in the first two seconds: it hits, turns, and dives for its cave. Stop it and the rest is winching; hesitate and your rig stays in the reef.
Every bommie and wreck in the islands holds one. Kerapu is also the fish behind Indonesia's best sweet-and-sour dishes.
